Today’s beer is one of the beer is my wife gifted me for my birthday. Phillips “Stave Us From Ourselves” barrel-aged Imperial Stout. Weighing in at 10.5% alcohol in a 650 mL bottle this extra strong beer packs some serious punch. I had it chilling in the fridge but took it out to let it warm up a bit so I could get a sense of its full flavor.
The Pour

This beer pours completely black with a mild amount of head. The aroma is simply Delicious, it reminds me of my youth when my mother would cook and she would use molasses, this beer has that sweet molasses aroma, with bourbon, toasted malts tempered with a hint of tangy hops. It smells complex and lovely.
Let’s taste
I have enjoyed Innis and Gunn’s barrel aged beers before so I had a hunch I would appreciate this one and I wasn’t mistaken. It is delicious. I really love this beer… Perhaps it is better suited to Winter sipping, but I’m still enjoying it – it’s summer, but hey – its night time and winter someplace. I think this may well be the best Phillips beer I’ve had.
